A quick anti-frustration-dinner

Coming home from work – tired, frustrated, and hungry, I knew what I had to do: I needed to do some cooking to relax. And it had to be quick – I was hungry. Oh, and there were some mushrooms left which needed to be eaten. Some pasta is always in the house. And the cream, oh, the cream, yeah, we should eat it… And half an onion was still in the fridge. And a handful of walnuts was in the cupboard, too. So I made a quick pasta-sauce of all these ingredients:

Chop 1/2 onion and sauté it in a little bit of oil in a large skillet. Meanwhile, grind some walnuts (about a handful) coarsely, add them and wait until they are fragrant. Meanwhile, chop some mushrooms (About 1-2 handfuls). Add them. Add a good shot of Sherry, add some cream (as much as you want, up to about 200 ml….), season with salt and pepper. Wait until it’s a thick sauce. If it’s too thick, add some pasta-water.

Add the pasta, garnish with chopped parsley, have it with a good wine and forget about the whole day.
