Mediterranean herbs for cookie monster!

Cookie monster is happy: He got some cookies again! It’s summertime, and there’s some rosemary at our balcony. So I got Aniko’s recipe for Rosmarin-Heidesand and made some cookies.

The fun thing is that nobody thinks about rosemary when trying these cookies. Some people asked me, if this would be ginger; my sister said something about cough drops, but many people liked the combination of sweet cookies with lemon and rosemary.

I reduced a bit the amount of sugar and added the lemon peel to the dough instead of rolling the dough in a mix of lemonpeel and sugar. And I didn’t cut them of long rolls of dough, I formed little balls and pressed them flat.

So grab some rosemary, make a dough, and bake!

you need:

200 g butter
180 g sugar
vanilla, salt
1 egg
grated zest of 1 lemon (organic grown)
320 g flour
3 rosemary sprigs

Beat together butter, sugar, lemon peel, and egg . Add salt and vanilla. Then add the flour, knead until it forms a dough. Don’t knead longer. Chop the rosemary very finely and knead it quickly into the dough. Let the dough rest for at least 1 hour in the fridge. You can also put it there overnight. Or for some days. No problem.

Preheat the oven (200°C).

Form little balls, press them to get rounds and put them on a baking sheet.

Bake the cookies for about 10 minutes (carefully! Look, what’s happening to avoid dark cookies like those you can see on the left side of the picture…). Let them cool and try them before cookie monster appears!
