quick vegan Muffins


For a long time I believed that vegan muffins are not possible. Not yummy. Since a few months I’m trying again and again, and yes: it’s possible to make yummy muffin-shaped vegan stuff! Their texture is not exactly like “classical” muffins – I would say, they’re “chewyier”, but they’re a quick little treat!

For the last orchestra rehearsal I made some look-what’s-at-home-muffins:

500 g of soy yogurt vanilla
2 apples
3 tblsp oil

2,5 cups flour
1 tblsp baking powder
3/4 cup sugar
1 tsp cinnamom
one pinch of nutmeg
one pinch of salt
one pinch of cloves

Preheat the oven (about 180°C). Whisk together the dry ingredients. Grate the apples (one finely, one coarsely), mix them with yogurt and oil. Stir everything together, fill in muffin cups and bake for about 30 minutes. Done!
