Don’t get bored!
It started with a bunch of Swiss chard (Mangold) and appetite for pasta. So I started to search the internet for pasta with Swiss chard. I found pretty similar recipes here and here. And then I prepared something similar.
Adding mustard to the creamy sauce is a very good idea, and this is a recipe which is easy to make for only one person.
You need per person:
1/2-1 small onion
about 4 leaves of Swiss chard (Mangold)
a little bit of oil
about 50 ml of cream
about 1 tsp of mustard
pasta for one person (about 125 g dried pasta)
Chop the onions and sauté them in a skillet until they are translucent. Meanwhile rinse the Swiss chard and cut the stems into small pieces.
In a pot, bring the water for the pasta to a boil. Salt it and add the pasta.
Add the chopped stems to the onions, cover the skillet with the lid and cook everything for about 4 minutes on low heat. Chop the leaves of the Swiss chard. Add them. Cover with the lid and wait some minutes. If there’s no liquid, add some tablespoons of water.
Mix cream and mustard and stir it into the onion-chard-mix. Salt and pepper. Stir well and let it simmer.
Chop the tomatoes.
When the pasta is done, drain it. Add the tomatoes to the sauce. Stir well. Add the pasta.
Serve topped with grated Parmigiano.
