Finally some Christmas-cookies

Christmas is coming – every year it’s getting a little faster. But yes, I’ve made it! I’ve started the cookie-season!

There is one dough I like for evening-baking: Mürbteig, this cookie-dough with lots of butter. You prepare the dough, put it in the fridge and when you find time during the next days, you can bake some cookies. Great for stressed-out-weekend-travelling people who want to make some cookies.

One of my more or less standard cookies are Husarenkrapferln. I think they have got many names (I’ve also read about “Liebesgrübchen”), I don’t know them from my family-tradition, so I won’t take part in discussions about the right name for these cookies. I know them from the baking-book “Backvergnügen wie noch nie” by A. Wolter und C. Teubner.

Easy to make, very yummy – everything you need for good Xmas-cookies!

I increased the amounts of the ingredients except the eggs. I’m kind of an egg-saver-person.

For 2 baking sheets you need:

250 g flour
125 g ground hazelnuts
125 g sugar
250 g butter
2 egg yolks
1/4 tsp cinnamom
salt

1 small glass of red jam or jelly (raspberry or redcurrant) of the stock of Mama’s jam-manufactury – or just from the supermarket… ;-)

Cut the butter into cubes. Knead together with sugar and egg yolks. Add flour, hazelnuts and cinnamom, add a dash of salt. Knead quickly until you obtain a dough, but don’t knead longer. Stop as soon as you can form a ball.

Put it into the fridge and let it rest for at least 1 hour up to some days.

Then get the dough out of the fridge, knead it a little bit to soften it and form little balls. Put them on a baking sheet. Using the end of a spoon-handle of a wooden spoon, cave in little holes – about 1/2 the depths of the ball.

Preheat the oven (about 175°C).

Stir the jelly a little bit, then fill it into a small plastic bag. Cut one edge to obtain a little hole and fill the jam into the cookies.

Bake them for about 20 minutes.

Let them cool down and dust with icing sugar.

  1. Ach, wie niedlich! Die schaffe ich hoffentlich noch nachzubacken :-) Plätzchen plus Marmelade sind ein Match-Made-in-Heaven!

  2. Solche mache ich gern gefüllt mit Lemon oder Cranberry Curd. Immer wieder toll.
