How did you make this Gurkensößle?
Some years later, my phone rang and it was Matthias, one of the group of foreign students during my stay in France. “Well… we are in the kitchen right now and wanted to make this Gurkensößle (cucumber sauce) that you’ve always made in France – how do you prepare it?”
It’s easy. For 2 persons you take
a little bit of oil
about 2 tblsp of flour
about 1/2 glass of water
about 100 g of cream
salt, pepper, nutmeg
a must: dill (perfect, when fresh! But dried dill is ok, too)
Chop the onions and sauté them in a large skillet in oil, until translucent. Meanwhile, peel the cucumber and cut it in little pieces (1/4 rounds, for example). Add the cucumber, continue sautéing a little bit (maybe 2-3 minutes), then dust the veggies with flour. Stir well and add the water. Season with salt, pepper and nutmeg, then add the cream. Boil until the consistency is creamy-saucy-as-you-like-it. Add the dill and serve with rice or potatoes.
