In case of emergency

Sometimes you come home, you are tired, you don’t feel like cooking for much time, but you need hot, comforting food. For this case, Nicky’s “Notfall-Pasta” in her book “Delicious Days” is a perfect thing: no long chopping, cutting, preparing, …: just make sure to have an organic grown lime (no lemon), pasta, olive oil and Parmigiano and start boiling water!

For two persons, you need:

200-250 g pasta (spaghetti or linguine)

1 organic grown  lime (in my opinion, lemons are no alternative here; Nicky uses the peel of 2 limes and the juice of 1)
olive oil
freshly grated Parmigiano

Boil the pasta in salted water, drain, but keep the boiling water. Meanwhile, wash the lime, grate the peel and squeeze it to get the juice.

Add lime peel and juice to the pasta, drizzle with olive oil (as much as you want…), add a little bit of the water you’ve kept and stir well. Serve with the grated Parmigiano, season with pepper – and enjoy your meal!
