hide-and-seek-playing zucchini


Summer is back! And the summer veggies return to my kitchen! This is a recipe of  schooltimes – I’ve got it from a schoolfriend’s mother – and I continue to make it again and again.

It’s an antipasto of zucchini – so grab a zucchini (hard to see in the picture, I know…) and a small can of tomato puree and start to prepare a wonderful little dish!

for 1-2 persons you need:

1 zucchino

70g tomato puree (Tomatenmark)
1-2 tblsp grated parmigiano (the good one, no cheap stuff)
1,5 tblsp olive oil
1/2 tblsp balsamico

in a pot, blanch the zucchini in salted water for about 5 minutes. (No cutting before!). Then let it cool, cut it in rounds and put the rounds nicely on a plate. Salt the zucchini lightly.

in a bowl, mix the tomato puree with the parmigiano, the olive oil and the balsamico. Season with salt and pepper.

Spread the tomato mix over the zucchini and garnish with grated parmigiano. Or with basil leaves.

  1. Even in the height of summer I could be persuaded to cook this. But really concentrata di pomodoro and not passata di pomodoro?

  2. Yes, really Tomatenmark! no passata, it would be too liquid! The consistency is something creamy, not a real sauce.

    Es lacht mich wirklich an! Mal sehen, ob ich es die Tage trotz Stress noch schaffe, nachzukochen :-)
