A quick dessert


Today I bought some rhubarb again. No time for baking, so I decided to make a quick compote. The amount would be enough for about 2 persons (hehe, I’ll have all this only for myself!) and the only thing that can go wrong is that you use a pot that is too small. You need:

750g of rhubarb
100 g sugar (don’t add all at the beginning and sweeten to taste – I like it sweet!)
1 tblsp of starch (Puddingpulver Vanille ist auch ok)

Peel the rhubarb (I mean cut the ends and pull away the long fibers on the outside) and cut it into pieces (about 1-2 cm long). Put them in a big pot with the sugar, bring to a boil. No water needed, rhubarb contains more than enough. Reduce the heat and continue boiling for about 5 minutes – the time depends on how you like your compote. I always make it kind of “senior-friendly”), stir in the vanilla. At the end, mix the starch with about 2-3 tblsp of water and add it while you stir the compote. Bring to a boil one more time and you’re done.
