Yellow like sunshine…
Maybe you can’t see it in the picture, but believe me: this is yellow like sunshine – I made a quick supper by following the recipe of Farfalle allo Zafferano in the book “Sundays at Moosewood Restaurant” by the Moosewood collective.
Coming home from a week-end with friends and having more or less nothing in the fridge, this is a quick and simple supper:
For one person, boil 125 g pasta – 2 minutes before the end of the cooking time, add 1-2 handfuls of frozen peas.
Drain the pasta and the peas.
In the pot (which is empty now), melt a little piece (maybe about 10 g) of butter. Add a pinch of ground saffron or some saffron threads. Stir well, then add 1-2 tblsp cream or crème fraiche. Season with salt and pepper. Add the drained pasta and peas, stir well, put it on a plate and garnish with grated Parmesan cheese. Enjoy your meal!
