Kati’s Pasta Salad


This bright thing in the sky is coming back! I think it’s called “sun” – I haven’t seen it for quite a long time.

This made me feel like eating something that reminds me of summer – I visited last year Kati in Bonn and she made a great pasta salad, “Italian style” as a German would say. As far as I know, salad made of pasta is a nightmare for an Italian.

I’m not an Italian, so I don’t care.

You need:

2 handful of pasta

1 handful of arugula (Rucola)
3-4 dried tomatoes
parmesan cheese
balsamico vinegar
olive oil

Cook the pasta. Some minutes before the end of the boiling time, add the tomatoes and boil them for some minutes with the pasta. Don’t cook the pasta “al dente” but longer – I don’t like pasta salad with pasta that is al dente… Drain it.

Wash the arugula and cut it into bite-sized pieces.

Chop the tomatoes, put pasta, tomatoes and arugula in a salad bowl, add vinegar and oil (trust your taste), season with pepper. Garnish with parmesan cheese. A perfect food for the bento!

  1. Einfach und doch schmackhaft! Also bei den Zutaten kann er ja nur schmecken! Eignet er sich auch noch am nächsten zum Mitnehmen oder wird der Salat zu latschig?

    • nö, ich fand ihn ok am nächsten tag. also von abends (oder eher nachts? egal…) herstellen bis mittags essen war völlig in ordnung!
