soup kitchen memories
11 years ago I worked as a volunteer in a soup kitchen in Berlin. Sometimes we had potatoes, eggs and mustard sauce – I haven’t known this dish before, but I always liked it – unlike Sr. Anna who often had to prepare (and to taste) it … It’s also very good with mashed potatoes.
Curious? Just try it yourself!
In the picture you see what you need:
1-2 eggs (as many as you want to eat)
potatoes (as many as you want to eat)
20 g butter
2 tsp flour
about 100 ml water
1/4 tsp vegetable stock (instant)
2 tblsp milk
2 tblsp mustard
salt and pepper (ok, they’re not shown in the picture…)
Boil the egg(s) until hard. Peel the potatoes and boil them in salted water.
Chop the onion. Melt a generous tblsp butter (or even a little bit more), add the onion and sauté for some minutes. Drizzle the flour over this mix and stir well. Then add water (stir well!! And don’t add all the water at once!), bring to a boil, stir well. Add the stock, milk, and mustard. Season with salt and pepper. Et voilà! Serve everything together, and you’re done!
Of course you can vary the amount of water and milk – just use as much as you like!
