Hot and cold
I got a great recipe from one of my books, Vegetarische Köstlichkeiten aus 40 Ländern der Welt by B. Rias-Bucher, Grünkern-Pilaw mit Bulgur. This week I wanted to make some, but I didn’t have the ingredients. So I made a found-in-the-cupboard-version. I just love the hot pilaw with the cooling yoghurt sauce.
1/2 cup Grünkern (unripe spelt grain that is smoked) in 1 cup of water (Boil it, lower the heat and wait until the liquid is absorbed by the grains)
in a large pot, heat some oil and add about 1 chopped onion. Sauté, add 1 grated carrot, then 1 can of tomatoes (about 400g). Season with chili (lots), paprika, and salt. Let it simmer until enough liquid has evaporated.
Mix 150 g of yoghurt with 1/2 tsp olive oil and mint (if you have fresh mint, use it. I never do, so I use Nana Minze, a good herbal mint tea…).
Serve everything together.
