potato salad – mediterranean style

Do you know the cookbooks of the Moosewood restaurant? If you like to cook vegetarian, buy them. They are great. Even without pictures.

Last week I made a potato salad which was inspired by a recipe of “Moosewood restaurant daly special” – a book of soups and salads. I didn’t follow exactly the recipe, basically do the following things:

soak dried tomatoes (not in oil; maybe 3-4) in hot water
boil potatoes (as many as your hunger tells you)
cut onions (about 1 scallion or 1/4 of a small onion very finely)

put the juice of 1/2 onion in a salad bowl, mix with about 1/2 tsp of ground cumin. Add olive oil (maybe 2-3 tblsp – trust your feeling), mix well. Peel and cut the potatoes, add them. Drain the tomatoes, cut them and add them as well. Add the onions, season with salt and pepper. As I had some feta-cheese in the fridge, I added feta, too.

Mix everything. You’re done.

And don’t start to discuss, if potato salad is mediterranean. Or if it’s only called mediterranean as it’s made with tomatoes and olive oil. As long as I like it, I don’t care ;-)
