When they are not cooked yet, they’re red…
Ok. Maybe I shouldn’t post a photo of it – but believe me, it’s very yummy!!! It’s a red-lentil-potato-curry with lemon. A friend prepared it sometimes and after having bought a can of coconut milk, I decided to make a similar curry. I think she got the recipe from the book “Rezepte unter 1,50 Euro” von B. Matthaei
That’s how I prepared it – makes 2 big bowls:
1 small onion
3 potatoes (medium size)
1/2 cup (125 ml) of red lentils
1 can (400 ml) of coconut milk
1 tblsp curry
1 lemon (the original uses 1 lime) – organic grown (you’ll need the peel)
1/2 tsp sugar
Chop the onions, sauté them in oil in a big pot. Peel the potatoes and cut them in cubes, add them. Then add the lentils, the coconut milk, the grated lemon peel as well as the juice of the lemon and the curry powder and let it boil until the lentils and the potatoes are done (maybe 20 minutes) – if necessary, add some water.
Season with sugar, salt, chili powder and serve hot.
If you want it more like a soup, just add water and season at the end.
I tried to use it for my bento, but the next day it was more like a brick than a soup or a stew, so… maybe I’ll eat it hot the next time….
