la salade de Christine
when I was in France for one year, I went with a friend to visit her sister Christine in the Bretagne. When we arrived, she prepared a salad which turned me into somebody who likes Avocado.
The salad was the perfect mix of tastes and textures – sweet apples, bitter endives, creamy avocado and crunchy nuts – and the best: it’s very easy to prepare!
I make this amount for a lunch for myself. I also prepare it often in the evening and take it to work for my lunch – it tastes still good, but it doesn’t look good anymore. So if you want to prepare it for friends, serve it immediately…
1 ripe avocado
1 tsp mustard
2 tblsp oil (just normal oil with neutral taste)
1 tblsp vinegar
1 tsp sugar
In a salad bowl mix mustard, oil, vinegar and sugar. Cut the endives (cut out the stems, so they won’t be too bitter), cut the apple, peel the avocado and cut it, too (everything bite-sized, nothing special). Mix everything. Chop the walnuts and add to the salad.
